Warm Chorizo Pasta Bake with Tenderstem Broccoli

A comforting pasta bake starring spicy cooking chorizo, simmering in a creamy tomato sauce. Add brown rice penne pasta and generously sprinkle with cheese, then grill until golden and bubbling. Serve alongside nutty tenderstem broccoli, for your greens. Buon appetito!

Before you start

  • Bring a large saucepan filled with salted water to a boil
  • Pull out a large frying pan, a large ovenproof dish, a sieve, a measuring jug & a grater

Time to prep

  • Slice the chorizo into 1cm chunks. Finely dice the onions. Finely chop or crush the garlic. Roughly chop the parsley
  • Meanwhile, add the penne to the saucepan and boil for 7-8 mins, until cooked, then drain

Build the flavour

  • Heat the large frying pan on medium-high heat. Once hot, add the chorizo and cook for 4-5 mins, until golden
  • Add the onion and cook for 4-5 mins, until softened. Season with salt and pepper
  • Add the garlic and paprika oregano blend. Cook for a further 1 min, then stir in the passata, chicken stock, half the honey and 100ml water. Bring to the boil, then lower the heat and simmer for 3-4 mins, until thickened

Grill the pasta bake

  • Turn the grill to high (240C)
  • Rinse the spinach, then stir into the sauce, along with the cooked pasta, until wilted. Remove from the heat, stir in half the parsley and season to taste
  • Transfer the pasta to the large ovenproof dish. Finely grate the cheese over the top and drizzle with the remaining honey
  • Grill for 5-6 mins, until golden and bubbling

Cook the broccoli

  • Meanwhile, trim the broccoli
  • Refill the saucepan with salted water, then bring to a boil. Add the broccoli and boil for 3-4 mins, then drain and season to taste

Plate up

  • Serve the chorizo pasta bake into bowls, with the broccoli alongside. Sprinkle over the remaining parsley
