Speedy Turkey Stir-Fry with Sesame Fried Egg

A 15-minute speedy meal for when you're in a crunch for time. We sizzle our British turkey mince with sweet honey, umami-tamari and Chinese five-spice. Toss in crunchy sweetheart cabbage and top with a sesame fried egg.

  1. Trim and thinly slice the cabbage. Heat a large non-stick frying pan with 1 tbsp sesame oil on high heat. Cook the cabbage and five-spice for 4 mins, to soften, then transfer to a bowl. Meanwhile, roughly chop the spring onions.
  2. Reheat the pan with 1/2 tbsp sesame oil. Cook the turkey for 1-2 mins, without stirring, to caramelise. Then mix in the spring onions and ginger garlic paste and cook for 2-3 mins, until golden brown, breaking up the mince with a wooden spoon. Add the tamari and cook for another 1-2 mins. Season to taste with sea salt and pepper.
  3. Finely chop the chilli (remove seeds for less heat). Roughly chop the peanuts and coriander. Quarter the lime. Return the cabbage to the pan with the honey and juice from 2 lime wedges. Stir for 2 mins, until the cabbage warms through.
  4. Meanwhile, heat a small frying pan with the remaining sesame oil on medium-high heat. Cook the eggs for 2-3 mins, until the white has set but the yolk is still runny. Season with sea salt and pepper.
  5. Serve the turkey topped with the sesame fried egg. Garnish with peanuts, chilli (to taste) and the remaining lime wedges.
