Jerk-spiced Turkey Salad with Black Beans, Charred Corn & Avocado

Before you start

  • Pull out a large frying pan, a medium frying pan, a medium bowl, a small bowl & a sieve

Time to fry

  • Heat the large frying pan with 1/2 tbsp oil on medium-high heat. Once hot, add the turkey and cook for 12 mins. Season with salt and pepper
  • After 12 mins, add the Jerk seasoning, toss to coat and cook for a further 4 mins, until cooked through
  • Meanwhile, drain the sweetcorn. Heat the medium frying pan with 1 tsp oil on high heat. Once hot, add the sweetcorn and cook for 5-6 mins, until deep golden brown. Allow to cool slightly

Make the salad & dressing

  • Thinly slice the spring onions. Halve the tomatoes. Cut the avocado into 2cm chunks. Trim and roughly chop the lettuce. Drain and rinse the beans
  • Add the prepped veg, beans and charred sweetcorn to the medium bowl. Squeeze in the juice from half the lime and toss to combine. Season with salt and pepper
  • In the small bowl, mix the remaining lime juice with the garlic paste, 1/2 tbsp oil and the chilli paste (for those who'd like more heat)

Plate up

  • Check your turkey is cooked through by inserting a skewer into the thickest part of the meat; the flesh should be white and the juices running clear
  • Share the salad between bowls, topped with the Jerk turkey. Drizzle over the dressing
