Cajun-style Jackfruit in Sweet Potato Jackets

Simmer organic Sri Lankan jackfruit with smoky Cajun spices, then stuff into whole roasted sweet potatoes. Dollop with creamy, 'cheez' sauce. Dish up with crispy tenderstem and sweetcorn salsa on the side, for extra pops of deliciousness.

Before you start

  • Preheat the oven to 240C / fan 220C / gas 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a small saucepan, a small bowl, a sieve, a measuring jug & a whisk

Get the sweet potato on

  • Halve the sweet potato and score a cross into the flesh (careful not to cut all the way through)
  • Place on the lined baking tray, cut side down, and toss with 1 tsp oil, a pinch of salt and pepper
  • Roast for 30-35 mins / air fryer 20-25 mins, until soft and golden

Build the flavour

  • Meanwhile, finely slice the shallot. Drain the sweetcorn
  • Heat the large frying pan with 1 tbsp oil on medium heat. Once hot, add the shallot and cook for 3-4 mins, until soft
  • Add the Cajun spice (use less for less heat) and three-quarters of the garlic paste. Cook for 1 min

Get your simmer on & roast the broccoli

  • Drain and rinse the jackfruit, then add to the pan along with the passata, stock powder, 200ml hot water (100ml for 1 person) and half the sweetcorn
  • Bring to a boil, then simmer for 8-12 mins, until the sauce thickens. Break up the jackfruit with a wooden spoon. Season with salt and pepper
  • When the sweet potato has 12 mins remaining, trim the broccoli and add to the tray
  • Drizzle with 1 tsp oil, season with salt and pepper and roast for another 10-12 mins / air fryer 5-7 mins, until soft

Make the salsa & 'cheesy' sauce

  • Meanwhile, roughly chop the coriander
  • Combine half the coriander, the remaining sweetcorn and a pinch of salt in the small bowl
  • Heat the small saucepan on medium-high heat. Once hot, add the cream and remaining garlic paste
  • Boil for 2-3 mins, whisking constantly, until thickened slightly. Season with salt

Plate up

  • Serve the jacket potatoes on plates and top with the jackfruit
  • Drizzle with the 'cheesy' sauce and spoon over the sweetcorn salsa
  • Sprinkle with the remaining coriander
