Sharing Sirloin Steak with Coconut Brown Rice, Brazilian-style Veg & Chimichurri

Sizzling Brazilian BBQ flavours, with no need to fire up the coals. We'll sizzle British sirloin steak, then pan-fry juicy peppers and onions with vibrant Brazilian spices. Pair with brown rice and top the lot with zingy chimichurri.

Before you start

  • Bring a medium saucepan filled with salted water to a boil
  • Pull out a medium frying pan, a small bowl & a sieve

Get the rice on

  • Remove the steak from the fridge and allow to come to room temperature. Season with salt and pepper
  • Add the rice to the saucepan and boil for 25-30 mins, until cooked, then drain and return to the pan

Prep & make the chimichurri

  • Finely chop the parsley. Deseed and finely dice the half chilli. Cut the onion and pepper into 3cm chunks. Halve the tomatoes
  • In the small bowl, combine the parsley, half the diced chilli (use less for less heat), the oregano, vinegar, half the garlic paste, 1 tsp olive oil and a pinch of salt and pepper

Time for steak

  • Heat the medium frying pan with 1 tsp olive oil on medium-high heat. Once hot, add the steak and cook (as a guide: cook for 3-4 mins on each side for medium-rare, or 6-7 mins for well done). In the final 1 min, add half the tempero baiano and half the hot honey and turn to coat the steak. Quickly sear the edges, then leave to rest

Get sizzlin'

  • Reheat the frying pan with 1 tsp olive oil on medium-high heat. Once hot, add the onion and pepper and cook for 4-5 mins, until softened and starting to char. Season with salt and pepper
  • Add the tomatoes, remaining tempero baiano (use less for less heat) and remaining garlic paste and cook for 2 mins. Stir in the remaining hot honey and a splash of water and cook for a further 1-2 mins, until reduced slightly

Last bits & plate up

  • Slice the steaks against the grain
  • Once cooked, stir the half pack of coconut through the rice
  • Share the rice and vegetables between plates, topped with the sliced steak. Drizzle with the chimichurri to finish
