Black Bean Burger, Sweet Potato Fries & Guac

Who doesn't love a burger? You'll make your own protein and fibre-packed black bean burgers, flavoured with chilli, cumin, paprika and nutty cashew parmesan cheez. Top ‘em with limey guacamole and fried onions. Serve with sweet potato fries on the side to complete the classic spread.

  1. Preheat the oven to 240C / fan 220C / gas mark 9. Cut the sweet potatoes into thick fries (peel optional). Place on a baking tray and toss with half the paprika, 1/2 tbsp oil, a pinch of sea salt and black pepper. Bake for 20-25 mins, turning halfway, until soft and golden.
  2. Thinly slice 1 onion, and finely dice the remaining onion. Heat a frying pan with 1/2 tbsp oil on medium heat. Add the sliced onion and a pinch of sea salt. Cook for 2-3 mins, until softened. Transfer to a bowl and keep warm.
  3. Reheat the pan on medium heat. Add the diced onion and cook for 2 mins. Drain and rinse the beans, then add to the pan along with the chilli flakes (to taste), cumin and remaining paprika. Cook for 3 mins, then add 4 tbsp water and cook for 1 min. Transfer to a mixing bowl with the cheez, a pinch of sea salt and black pepper and mash well. Stir in the flour, then set aside to cool.
  4. Shape the bean mixture into 4 burgers. Wipe the frying pan and reheat with 1/2 tbsp oil on medium heat. Add the burgers and cook for 3-4 mins, on each side, until golden.
  5. Make the guacamole; roughly mash the avocados with the back of a fork and place in a bowl. Roughly chop the coriander. Roughly dice the tomatoes. Add both to the avocado bowl along with the juice from the lime (to taste) and a pinch of sea salt. Mix well.
  6. Serve the burgers with fried onions, fries and guacamole on the side.
