Speedy Black Bean British Beef with Sticky Aubergine Rice

Golden gooey aubergine, roasted with honey and tamari. British beef sizzled with sticky black bean paste, honey, tamari and vinegar. Vibrant broccoli on the side for greens. The big flavours of this dish are impossible to resist.

Before you start

  • Turn the grill to high (240C)
  • Line a baking tray with silver foil
  • Pull out a large frying pan, a medium frying pan, a small bowl & a measuring jug

Grill the aubergine

  • Dice the aubergine into 1cm chunks
  • Add to the foil-lined tray, toss with 2 tsp oil and a pinch of salt. Grill for 7 mins

Add the tenderstem & glaze

  • In the small bowl, combine the honey, tamari and 2 tsp oil. Trim the tenderstem
  • After 7 mins, spoon half the glaze over the aubergine. Add the tenderstem to the tray and drizzle with 1 tsp oil. Grill for another 7 mins, until the aubergine is soft and golden

Build the dish

  • Thinly slice the spring onions, keeping the green and white parts separate
  • Heat the large frying pan with 2 tsp oil on medium-high heat (we used the 30cm HexClad Hybrid Pan). Once hot, add the beef and spring onion whites and cook for 4 mins, breaking up the mince with a wooden spoon
  • Add the Asian paste and black bean paste, then cook for 3 mins, until fragrant and golden. Season with salt and pepper
  • Mix the cornflour and vinegar into the remaining glaze. Pour over the beef, along with 100ml water (50ml for 1 person). Simmer for 4-5 mins, until the sauce is thick and glossy

Rice time

  • Meanwhile, heat the medium frying pan on medium-high heat. Once hot, add the rice and break it up with a wooden spoon
  • Add a splash of water and cook for 2-3 mins, until piping hot. Stir the sticky glazed aubergine into the rice

Plate up

  • Share the black bean beef between bowls, with the tenderstem and aubergine rice alongside. Garnish with the spring onion greens
