  1. Preheat the oven to 220C / fan 200C / gas mark 7. Boil a kettle. Dissolve the stock cube in 100ml boiling water. Leaving the skins on, cut the potatoes into fries and place on a lined baking tray. Season with sea salt and black pepper; drizzle with 1 tbsp oil and mix thoroughly. Bake for 30-35 mins, until golden and crispy.
  2. Thinly slice the shallot. Crush the garlic. Thinly slice the mushrooms.
  3. Heat a medium frying pan with 1 tbsp oil on a medium-high heat. Add the shallot, mushrooms and garlic, then cook for 5 mins. Add the stock and cook for 3 mins. Add the yoghurt, vinegar and cashew 'parmesan'; season with sea salt and black pepper and simmer for 5 mins. Add more water to thin the sauce, if needed.
  4. Heat a seperate frying pan with 1/2 tbsp oil on a medium heat. Season the steaks on both sides with sea salt and place in the pan. Cook until golden brown (as a guide: 2-3 mins on each side for medium-rare or 4-5 mins on each side for well-done). Remove the steaks from the pan and leave to rest on a plate.
  5. Trim the beans, place in a saucepan and cover with lightly salted boiling water. Cook for 5 mins, then drain.
  6. Serve the steak with the mushroom sauce, chips and beans.
