Creamy Prawn Pasta Bake with Wholewheat Maccheroni, Mixed Veg & Cheesy Crumb

Get ready for a cosy family favourite! This creamy pasta bake is packed with twirly wholewheat maccheroni, buttery responsibly-sourced king prawns, and vibrant mixed veg. Top it all of with a cheesy crumb, then bake until golden and bubbling. Clean plates guaranteed!

Before you start

  • Preheat the oven to 220C / fan 200C / gas mark 7
  • Bring a large saucepan of salted water to the boil
  • Pull out a large baking dish, a large sieve & a measuring jug

Get started

  • Halve the tomatoes. Thinly slice the courgette into 1/2cm half-moons. Finely chop or crush the garlic. Roughly chop the basil
  • Add the passata, tomatoes, courgette, garlic and half the basil to the large baking dish. Toss together with 2 tbsp olive oil Season with salt and pepper
  • Roast in the oven for 5 mins, until the tomatoes are softening

Pasta time

  • After 5 mins, drain the prawns and add to the baking dish. Roast for a further 8 mins
  • Finely grate the cheese. Rinse the spinach and leave in the sieve
  • Add the pasta to the saucepan. Boil for 7-8 mins. Drain the pasta over the spinach sieve to wilt. Toss with 2 tsp oil

Build the dish

  • Remove the baking dish from the oven. Add the soft cheese and 50ml water and stir well
  • Stir in the pasta and spinach. Add a splash more water if the sauce is dry. Sprinkle over the grated cheese and the chilli flakes (for those who'd like the heat). Season to taste
  • Bake for 5 mins, until the sauce is bubbling and the prawns are pink and cooked through

Plate up

  • Check your prawns are cooked through; they should be opaque, firm and steaming hot
  • Share the pasta bake between bowls. Garnish with the remaining basil
