Speedy Flat Iron Steak Noodle Salad with Nectarine

Flat iron steaks from grass-fed British beef are the star of this refreshing summer dish. Sweet slices of nectarines, crunchy cucumber and tender stem nestled in brown rice noodles. A tangy dressing of ginger, chilli, lime tamari and sesame brings it all together. The perfect dish to fuel those busy summers.

  1. Boil a kettle. Trim the broccoli. Halve the cucumber lengthways, scoop out the seeds with a spoon, then thinly slice into half-moons. Destone and slice the nectarine into 10 wedges.
  2. Heat a medium saucepan with salted boiling water on high heat. Add the noodles and broccoli, gently separate with a fork and boil for 3-4 mins, until cooked. Drain, then rinse under cold water.
  3. Heat a frying pan with 1/3 tbsp oil on medium-high heat. Season the steaks with sea salt and black pepper and cook (as a guide: cook for 2-3 mins on each side for medium-rare, or 3-4 mins for medium-well). Remove and leave to rest then thinly slice against the grain.
  4. Reheat the steak pan with 1/2 tbsp oil on medium heat. Add the nectarine and cook for 3 mins, until softening.
  5. Make the sauce; finely chop or grate the ginger. Finely slice the chilli (remove the seeds for less heat). In a small bowl, mix together the ginger, chilli (to taste), sesame oil, half the honey, juice from the lime and the remaining tamari.
  6. Add the cooked noodles and broccoli, cucumber, peanuts and sauce to the nectarine pan. Tear in the mint leaves and toss to combine.
  7. Spoon the noodles onto two warm plates and top with the steak slices. Garnish with any remaining chilli (to taste).
