Supercharge your broth | Mindful Chef

Two new slow-cooked beef broths have joined our range. Starring 100% British organic beef, pasture and forage fed for maximum flavour. They’re high in protein to fill you up. Rich in collagen to nourish. Totally worth every soothing sip. But what if you want to supercharge your new beef bone broth? Chef James has shared an easy recipe to do just that. Get ready for a totally epic Pho you’ll want to tell all your friends about. And don’t be afraid to experiment with cupboard ingredients and back-of-the-fridge veggies.

Ingredients:

Mindful Chef beef broth
100g Beef mince
1 x bok choi
80g mushrooms
2 x garlic clove
2cm ginger
2 x spring onion
5g coriander
1 x egg
50g noodles

Step 1: It’s prep time

Season the mince with salt and pepper and form into balls. Chop the bok choi, slice the mushrooms, thinly chop or grate the garlic and ginger. Thinly slice the spring onions, finely chop the coriander. Place a pan of water onto boil and cook the meatballs and egg for 7 mins then drain. Run the egg under cool water to peel.

Step 2: Get Cooking

Place your Mindful Chef beef broth into a pan and bring to a simmer. Place the noodles, garlic, ginger, mushrooms, bok choi, 1/2 coriander and 1/2 spring onion in a pan and simmer for 5 mins. Add the meatballs, simmer for 2 mins, season with salt and pepper.

Step 3: Plate up
