Poached pear & granola goodness

Chef Thea’s got a delicious new spin on how to use your gut-boosting breakfasts.

Add in gently poached conference pear (in season and in your Fruit Box) and a dollop of creamy yoghurt to transform breakfast into a thing of beauty.

You will need...

How to make it...

  1. Peel your pear and halve lengthways. Use a spoon to scrape out the core.
  2. Pop in a pan with 100ml water and the juice from the orange, then add in the cinnamon, star anise and seeds from the vanilla pod.
  3. Bring to the boil for 5 mins, then gently simmer for 15 mins until softened.
  4. Remove your pear and set aside in a bowl to cool. Return your pan to the heat and boil until your sauce starts to reduce (but is still runny).
  5. Pour the sauce onto the pear. Top with a handful of Mindful Chef granola, some coconut yoghurt, and a drizzle of maple syrup.
