Healthy strawberry & coconut banana ice cream

Instead of reaching for the shop-bought ice cream, try making this incredible-tasting natural version yourself. It's such a simple and quick recipe with only four ingredients. You just need to freeze the bananas and strawberries for a few hours (or overnight) and after that, it takes only 5 minutes to make. You'll be amazed at the smooth creamy texture.

Get creative and try variations, such as chocolate and peanut, made by substituting the strawberries with a tablespoon of raw cacao, a tablespoon of peanut butter and a teaspoon of maple syrup.


Ingredients:

  • 2 frozen bananas, peeled and each cut into 3 pieces
  • 4 frozen strawberries, green stalks removed
  • 50ml coconut milk
  • 1/2 tbsp desiccated coconut

Method:

  1. Place the bananas, strawberries and coconut milk in a blender or food processor and blend for 1 minute, or until all the ingredients are well combined.
  2. Spoon into bowls and sprinkle over the desiccated coconut.
