Mushroom, Cranberry & Chestnut Roast

For vegetarians and vegans we have a mouth-watering veggie chestnut roast for Christmas day.

Honey-glazed parsnips & carrots

We like to serve our turkey with honey-glazed parsnips & carrots: Simply roast sliced parsnips and carrots with a drizzle of olive oil, honey and a sprinkle of fresh thyme. Toss to coat in the mix, season with sea salt and black pepper and roast at 200C/gas mark 6 for 20-30 mins, turning halfway through.

Simple cranberry sauce

To make a simple fresh cranberry sauce recipe for 4 people; in a saucepan, place 200g fresh cranberries, 1-2 tbsp maple syrup or honey and 300ml boiling water. Simmer for 5-10 mins until the sauce has thickened. Delicious drizzled over turkey or the chestnut roast.
