4 speedy salads you need this summer | Mindful Chef

Summer is well and truly here and there’s nothing we enjoy more than dining al fresco! That’s why we introduced our NEW summer salad series to the Mindful Chef menu.

These new speedy salad recipes can all be made in under 20 minutes, with minimal prep, and are packed with nutritious, seasonal produce to help you look and feel your best. Leaving you with plenty of time to soak some evening rays.

Between June and September, we’ll be introducing 4 NEW delicious salad recipes to the menu each month. These recipes will now be available alongside our existing weekly recipes, meaning you can choose from 16 options each week!

Our first batch of summer salad recipes went down a storm. Here is a sneak peak of the tasty salads you could be tucking into between now and the 16th August…

1. Asian-style steak, peach & noodle salad

600 calories • 50g carbs • 27g fat • 44g protein

We’ve served succulent slices of steak with fresh sweet peaches, cucumber and sugar snaps, nestled in brown rice noodles with an Asian-inspired dressing. Our delicious peaches are sourced from Mudwalls Farm in Warwickshire, they’re an excellent source of vitamin C, which helps form collagen to support healthy skin, amongst other benefits.

2. Grilled tahini aubergine, chickpea & cherries

488 calories • 53g carbs • 28g fat • 20g protein | Vegan

We’ve layered chargrilled aubergine and courgette ribbons over chickpeas and a sweet cherry salsa for a light and refreshing summer salad. A tahini and pomegranate molasses drizzle adds a subtle sweetness as do the juicy fresh red cherries. Like our peaches, we get our cherries from Mudwalls Farm. they’re best enjoyed between June to August and are a great source of potassium to assist kidney and heart function.

3. Caribbean chicken & charred corn salsa

500 calories • 22g carbs • 28g fat • 47g protein

Bring a taste of the Caribbean to your kitchen with our jerk chicken salad! We’ve served succulent chicken breast, from Traditional Norfolk Poultry, with a charred sweetcorn, coriander & lime salsa stirred through creamy avocado and crisp gem lettuce!  The sweet heritage tomatoes are grown by family-run farm Valefresco in the Cotswolds. They add a splash of vibrant colour and a boost of powerful antioxidants and anti-inflammatories.

4. Hot smoked salmon, courgette & herby yoghurt

477 calories • 35g carbs • 24g fat • 34g protein

We’ve paired hot smoked salmon with courgette ribbons, freshly podded garden peas, baby potatoes and heritage tomatoes, dressed in a dill, lemon and coconut yogurt dressing. The flaked hot smoked salmon, is sourced from John Ross Jr who have been the proud holders of the Royal Warrant for over 25 years: a true testament to the quality of their fish. It adds a boost of omega-3 fatty acids for heart health.
