We source our luxury salmon from family-run John Ross Jr, who have been the proud holders of the Royal Warrant for over 25 years: a true testament to the quality of their fish. All John Ross Jr salmon is sustainably and ethically landed off the NW Coast of Scotland from the cold, clear Atlantic waters. It doesn’t get much fresher than that! In addition to premium salmon fillets, we also use smoked salmon from John Ross Jr. in our recipes. It is traditionally hung and smoked in Scottish 19th century red brick kilns for optimum flavour and texture.
