In light of this, we thought we’d share three hacks for a plant-based Pancake Day, no butter or eggs necessary!
1. Power to buckwheat flour
Not only is buckwheat flour gluten-free, it also makes a great base for egg-less pancakes. This week we serve up buckwheat pancakes with harissa-spiced jackfruit, but they’re equally delicious with sweet toppings too – you decide. To make your own, follow the steps here.

2. Give chickpea flour a go
We love chickpeas so much, we’ve used them twice in this week’s Tamarind chickpea curry & chickpea pancakes. Once you try them you’ll be hooked and won’t be able to eat curry without ‘em. Give chickpea pancakes a go by following the recipe here.

3. All hail the chia egg
No one should miss out on the Blueberry & banana pancakes from our cookbook Mindful Chef: Eat Well, Live Better. To make them egg-free, take 1 tbsp chia seeds and place in a small bowl with 3 tbsp water. Wait for around 5 minutes until a gel forms, then use in the recipe, just as you would a regular egg!
