1. Slow-cooked lamb with crushed potatoes
Treat your family to a traditional Easter lunch, try our slow cooked tender lamb shoulder simmered in a herby tomato sauce alongside crushed potatoes and green beans. Fresh rosemary, parsley and bay add a fragrant aroma to the sauce with the bonus of offering medicinal properties.
2. Persian spiced lamb with pomegranate and tzatziki
If you’d rather spice things up, try our fragrant spiced lamb with pomegranate quinoa and tzatziki, made with thick coconut yoghurt, refreshing cucumber, zingy lemon and mint for aiding digestion.
If you’re short for time, try our super speedy succulent lamb roast with homemade mint sauce, alongside parsnip mash and purple carrots (rainbow or regular orange carrots will also work well!).
This warming Scandinavian-inspired dish of roasted beetroot, crunchy radishes and black beluga lentils, makes the perfect vegan starter, drizzled with a coconut yoghurt and dill sauce. Beetroot is an excellent source of iron and folic acid.
Serve up our protein-packed parsnip, kale and kidney bean hotpot as a vegan main. This delicious dish is layered with sweet roasted parsnip crisps and drizzled with a homemade parsley pesto, for a boost of vitamin C.
To finish, this rich and creamy chocolate avocado mousse is made only with coconut milk, avocado and raw cacao and a drizzle of maple syrup. It tastes so indulgent but contains only ingredients that are really good for you, gluten-free and vegan. We serve ours with coconut yoghurt and berries!
