4 Superfast summer salads

Summer is well and truly here and there’s nothing we enjoy more than dining al fresco. Our 15-minute salads are perfect for maximising long summer evenings, with minimal prep and maximum flavour, of course!

These 4 delicious recipes are packed with nutritious, seasonal produce to help you look and feel your best. Available on the menu until August 30th.

1. Roasted aubergine, chickpea & cherries with tahini

488 calories • 53g carbs • 28g fat • 20g protein | Vegan

We combine grilled aubergine and courgette with chickpeas, juicy red cherries and bunches of fresh mint and parsley. A sticky pomegranate molasses and tahini dressing add a sweet, creamy depth. Our sweet cherries come from family-run Mudwalls Farm in Warwickshire and are in season from June until September.

2. Steak with heritage tomato salad & salsa verde

435 calories • 25g carbs • 22g fat • 36g protein

Our take on the Italian panzanella salad is made with sweet heritage tomatoes, crispy garlic roasted potatoes and topped with slices of juicy steak and a fresh herb salsa verde dressing. The grass-fed beef in this recipe comes from award-winning butchers Farmison&Co, based in the Yorkshire Dales.

3. Harissa chicken, cucumber ribbons & orange salad

631 calories • 52g carbs • 25g fat • 52g protein

This dish is a beautiful fusion of vibrant summer flavours. We serve harissa spiced chicken with fresh orange slices and cucumber ribbons. To balance the hot harissa, we’ve drizzled over a cooling turmeric, lemon and coconut sauce. The free-range chicken in our recipes comes from Traditional Norfolk Poultry, where the birds have access to a natural lifestyle in the unspoilt East Anglian countryside and are free to come and go as they please.

4. Nori wrapped salmon, ginger & spring onion rice

503 calories • 47g carbs • 20g fat • 38g protein

We wrap our delicious sustainably sourced salmon in nori seaweed and bake it in the oven to intensify the flavour. Served on a bed of fragrant ginger and spring onion rice with fresh sesame seeds, cucumber, grated carrot and a drizzle of tamari. Did you know that over 700 varieties of seaweed grow off the British shores? And that it’s a rich source of vitamins, minerals, protein, iodine and fibre.
