Our quick deconstructed crumble is packed with spiced juicy plums – an excellent source of potassium, fibre and vitamins A and C – and topped with a delicious crumble, containing crunchy pecans, flaked almonds, coconut and chia seeds. We’ve served this healthy twist on a British classic with a dollop of dairy free vanilla yoghurt for the ultimate warming Autumnal dessert. Perfect for dinner parties, midweek dinners or even breakfast!
Ingredients:
Spiced plums
- 12 plums
- 70ml cold water
- 50ml maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp mixed spice
Crumble topping
- 80g gluten-free oats
- 50g pecans
- 20g flaked almonds
- 2 tbsp chia seeds
- 4 tsp desiccated coconut
- 1 tsp ground cinnamon
- Pinch of sea salt
- 2 tbsp maple syrup
- 2 tbsp coconut oil (melted)
Vanilla yoghurt
- 150ml coconut yoghurt
- 1 tsp maple syrup
- ½ tsp vanilla bean paste
Method:
- Preheat the oven to 180 C / gas mark 4.
- Cut the plums in half, remove the stones and slice each half into 4 slices.
- Place the plum slices in an ovenproof dish or a deep baking tray and pour over the maple syrup, cold water and sprinkle over the spices. Place in the oven for 20 mins to soften.
- In a bowl, mix together all the dry crumble ingredients then stir in the maple syrup and coconut oil. Spread out into a thin layer on a baking tray. Place in the oven for 15 mins, turning halfway through, until turning golden brown.
- While the plums and crumble topping are cooking, combine the coconut yoghurt with the maple syrup and vanilla bean paste.
- Spoon the plums into four warm bowls, top with the maple pecan & chia crumble and spoon over the vanilla coconut yoghurt.
