Lovely leek recipes

With their signature white-and-green stalks, leeks are a winter cooking staple. Prized for their mild, delicate flavour, they bring gentle sweetness and depth of flavour to everything from comforting pies to creamy pasta sauces.

All hail the allium

Part of the allium family, leeks are the sweeter sibling to onions and garlic. They offer savoury depth without overpowering a dish, which is what makes them so versatile. Cook them low and slow and they soften to a jammy, buttery texture, releasing a natural sweetness that pairs perfectly with rich, comforting dishes. Char them for a subtle smokiness or braise until tender and glossy. The possibilities are truly endless!

Hardy and reliable, leeks are sown in spring and left to grow steadily through summer and autumn. Primarily a winter crop, they take around six months to mature – but they are definitely worth the wait. One of their greatest advantages is their resilience. Sturdier varieties can remain in the ground even as temperatures drop, ready to be lifted whenever needed, from September right through to May. Their long harvest window makes them one of the season’s most reliable crops – and a dependable kitchen companion that carries us through the colder months.

From the Nile to the nation

Leeks trace their roots back to ancient Egypt, before winning over the Greeks and Romans. The Romans later introduced leeks to Britain, where they became a firm favourite – eventually becoming the national vegetable of Wales. Still a staple in classic Welsh cawl, leeks remain woven into the fabric of British cooking today.

Leeks bring a mellow sweetness that makes every dish feel a little more comforting. Here are some of our favourite ways to let them shine:

 

Chicken & Leek Pie with Parsnip Mash, Chestnuts & Braised Red Cabbage

Jammy, buttery leeks pairs beautifully with juicy free-range chicken in this warming pie. Sweet chestnuts add a delicate, umami flavour, while a creamy parsnip and potato mash topping brings the comfort. Dish up alongside vibrant red cabbage, braised low and slow, for vibrant colour and gentle tang. 

 

Goat’s Cheese Risotto with Leek & Honey-roasted Carrots

Gently softened leeks form the perfect base for this creamy risotto, balancing the subtle sharpness of British goat’s cheese. Finish with leafy spinach and serve with sticky honey-roasted carrots on the side for a beautifully balanced plate.

 

Pan-fried Pork Steaks with Mustard Mash & Leek Gherkin Sauce

Sweet leeks star in a velvety sauce which is spooned generously over perfectly seared pork steaks. Teamed with creamy mustard mash and vibrant green beans, this is a thing of beauty.

 

Creamy Chicken, Mushroom & Leek Pasta Bake 

Few things beat a bubbling, creamy pasta bake. Ours celebrates sweet leeks, tender free-range chicken and umami-rich mushrooms, baked in a creamy sauce. Brown rice penne adds a hearty bite, while leafy spinach melts into the sauce for a pop of colour. This is cosy, crowd-pleasing comfort at its finest.
