Introducing our NEW customer favourites series to the menu | Mindful Chef

We’re excited to announce that this September we are launching our NEW ‘Customer Favourites’ recipe series on the Mindful Menu.

These 4 recipes have been chosen based on which meals our customers have enjoyed the most. Want to have your say and get your favourite recipes back on the menu? Take a look at the bottom of this blog to find out how.

The ‘Customer Favourites’ will change every 6 weeks and will run alongside our existing 12 weekly recipes, increasing your choice to 16 delicious healthy recipes each week!

Here is a sneak peak of the tasty favourites you could be tucking into between now and mid-October…

1. Teriyaki salmon, crispy chard & choi sum

512 calories • 48g carbs • 21g fat • 39g protein

This Asian-inspired dish is a popular one, featuring a homemade sticky teriyaki sauce, which is drizzled over pan-fried salmon. Rich in omega-3 fatty acids, our quality salmon is sustainably and ethically landed off the NW Coast of Scotland by John Ross Jnr. It sits on a protein-packed bed of crispy chard, choi sum and British quinoa.

2. Pulled barbecue jackfruit & avocado salsa

547 calories • 82g carbs • 21g fat • 10g protein | Vegan

We’re very proud to have been the UK’s first recipe box to cater for vegans. We now 5 offer tasty vegan recipes on the Mindful Menu each week!

Many of our customers hadn’t cooked with jackfruit before this recipe came onto the menu. Jackfruit is a spiky fruit grown in Sri Lanka which has a ‘meaty’ texture when cooked in stews and curries. We’ve simmered it here in a barbecue-style sauce and topped with an avocado salsa.

3. Tandoori chicken, red cabbage & apple slaw

592 calories • 61g carbs • 19g fat • 48g protein

We’re excited to have our Mindful version of a takeaway classic back on the menu! It’s made by marinating free-range chicken breasts, from Traditional Norfolk Poultry, in coconut yogurt and our own blend of Tandoori spices, including paprika, turmeric, ground ginger, ground coriander and ground cumin, then oven-baking. It’s served with brown rice and a refreshing red cabbage and apple slaw, packed with vitamin C for strengthening the immune system.

4. Chimichurri steak & baked sweet potato

532 calories • 49g carbs • 22g fat • 37g protein

Featuring award-winning grass-fed beef from Farmison, it’s no surprise this recipe is a popular choice! We’ve drizzled flat iron steak with chimichurri – an Argentinian sauce that’s packed with flavourful parsley, oregano, red chilli and lemon juice –  and served it with a roasted red pepper stuffed with cherry tomatoes and sweet potato wedges, rich in antioxidant beta-carotene.
