This summer we introduced our NEW salad series to the Mindful Chef menu.
These new speedy salad recipes can all be made in under 20 minutes, with minimal prep, and are packed with nutritious, seasonal produce to help you look and feel your best. Leaving you with plenty of time to soak some evening rays.
Between June and September, we’ll be introducing 4 NEW delicious salad recipes to the menu each month. These recipes will now be available alongside our existing weekly recipes, meaning you can choose from 16 options each week!
Our first two batches of summer salad recipes went down a storm. Here is a sneak peak of the tasty salads you could be tucking into between now and the 9th September…
1. Mediterranean artichoke & citrus lentils
491 calories • 44g carbs • 29g fat • 19g protein | Vegan
We’ve use speedy pre-cooked lentils in this delicious salad, which is packed with Mediterranean-flavours from the fennel, fresh tangy orange, artichoke hearts and black olives. Our delicious juicy oranges are sourced from Mudwalls Farm in Warwickshire, they’re an excellent source of vitamin C, which helps form collagen to support healthy skin, amongst other benefits. We’ve topped this salad with a sprinkle of toasted pine nuts for a magnesium rich crunch.

2. Apricot, heritage tomato & steak salad
433 calories • 11g carbs • 27g fat • 35g protein
We’ve paired succulent slices of steak with juicy heritage tomatoes, grilled sweet apricots and sugar snap peas, then drizzled with a purple pesto that’s made with purple basil and beetroot, packed with antioxidants. The grass-fed beef in this recipe comes from award-winning butchers Farmison, based in the Yorkshire Dales.

3. Dukkah chicken & red pepper quinoa

Take your chicken salad to the next level with Egyptian spice blend dukkah, packed with crunchy nuts and sesame seeds! We’ve coated our chicken breasts with dukkah and pan-fried, then served on a bed of roasted red pepper, cherry tomato and parsley quinoa. This delicious salad is finished off with sweet nectarine slices, packed with anti-inflammatory properties.

4. Spanish cod, chickpeas & roasted peppers
522 calories • 48g carbs • 25g fat • 41g protein
This satisfying salad of fibrous chickpeas, roasted yellow peppers, sundried tomatoes and iron-rich spinach is topped with chunky parsley and lemon cod. Our delicious cod comes from James Knight of Mayfair, who are the holder of not just one, but two royal warrants, which is true testament to the quality of this sustainably caught fish.
