Gut healthy overnight oats: the ultimate make-ahead breakfast

This isn’t just any overnight oats recipe – it’s your new favourite way to enjoy our Gut Healthy Porridge. Made with fibre-rich gluten-free oats, chia seeds, almonds, and banana flakes, this blend soaks overnight to create a creamy, filling breakfast that’s as good for your gut as it is delicious.

It takes just minutes to prep, and by morning, you’ll have a ready-to-eat bowl packed with flavour, texture, and feel-good.

What you’ll need:

  • 50g of Mindful Chef’s Gut Healthy Porridge
  • ¼ cup milk of your choice (dairy or plant-based)
  • ¼ cup natural yoghurt or kefir (for a probiotic boost)

Method:

  1. In a bowl or jar, combine 50g of the Gut Healthy Porridge with your chosen milk and yoghurt or kefir.
  2. Mix to combine. The chia seeds and oats will begin to soak up the liquid right away.
  3. Cover and place in the fridge overnight. While you sleep, the ingredients work their magic: the oats soften, the chia thickens, and the flavours blend into a rich, creamy texture.
  4. In the morning, give it a quick stir and make it your own with your favourite toppings. We love thin slices of crisp apple, a handful of crushed almonds, goji berries, and a dollop of creamy yoghurt. Psst… you should also try adding stewed rhubarb on top. The tartiness pairs beautifully with the warm cinnamon notes in the porridge.
