Aubergine & bean burgers with avocado

Our mini bean burgers are sandwiched between baked aubergine slices which contain potassium to lower blood pressure, instead of a starchy bread bun. Eating the skin of an aubergine provides you with nasunin, an antioxidant which gives aubergines their purple colour.
