Enjoy our recipe for <a href=\"https:\/\/www.mindfulchef.com\/gluten-free-recipe-boxes\">Gluten-free<\/a>, dairy free, vegan mince pies!<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<div class=\"recipe-card-inner\"><hr \/>\n<p><b>For the mince meat<\/b><\/p>\n<\/div>\n<ul>\n<li>400g dried mixed fruit<\/li>\n<li>75g dried cranberries<\/li>\n<li>Juice from 4 clementines<\/li>\n<li>Juice and grated zest of 1 orange<\/li>\n<li>1 apple, grated<\/li>\n<li>2 tsp ground cinnamon<\/li>\n<li>2 tsp ground ginger<\/li>\n<li>2 tbsp coconut oil<\/li>\n<\/ul>\n<p><b>For the pastry<\/b><\/p>\n<ul>\n<li>300g gluten-free plain flour<\/li>\n<li>200g coconut oil (at room temperature, rather than liquid)<\/li>\n<li>50g ground almonds<\/li>\n<li>150ml cold water<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-905\" src=\"http:\/\/blog.mindfulchef.com\/wp-content\/uploads\/2017\/12\/Mince-pie-2-1.jpg\" alt=\"\" width=\"600\" height=\"337\" srcset=\"https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2017\/12\/Mince-pie-2-1.jpg 600w, https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2017\/12\/Mince-pie-2-1-300x169.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<div class=\"recipe-card-inner\"><hr \/><\/div>\n<div class=\"recipe-card-inner\">\n<p><strong>Method:<\/strong><\/p>\n<hr \/><\/div>\n<ol>\n<li>To make the mincemeat, place all the ingredients\u00a0into a saucepan and simmer on a low-medium heat for 20 mins until the mix is sticky and there is no liquid left. Transfer to a bowl to cool.<\/li>\n<li>Preheat the oven to 180C \/ gas mark 4. Place all pastry ingredients into a food processor, breaking up the coconut oil into small pieces before you add in and then pulse all until it begins to stick together and form a dough.<\/li>\n<li>Remove from the food processor and form into a big ball of dough. If you have time, place in the fridge for 20-30 mins before rolling.<\/li>\n<li>Place on a clean work surface and sprinkle over a little flour. Using a rolling pin, roll into 1\/2 cm thick, and using a cutter (you can use the top of a glass or ramekin which is a similar size if you don\u2019t have a cutter) make 16 rounds.<\/li>\n<li>Leave some leftover pastry to form the tops of the mince pies &#8211; you&#8217;re choice, you could do Merry Christmas like us!<\/li>\n<li>Lightly oil a 12 hole cake tin. Place the pastry rounds into the baking tin, gently push in. Spoon in 2 tsp of mince into each round, and top with the pastry decorations. Place in the oven for 20 mins until turning golden.<\/li>\n<\/ol>\n\n\n<p>Looking for quick, nutritious meals?
