This nourishing breakfast is full of good fats, iron, protein, and is <a href=\"https:\/\/www.mindfulchef.com\/gluten-free-recipes\">gluten-free<\/a> &#8211; the perfect start to your day.<\/p>\n<\/div>\n<div class=\"cookbook-container cookbook-container-ingredients\">\n<h3 class=\"cookbook-title cookbook-title-ingredients\">Ingredients<\/h3>\n<p class=\"cookbook-ingredient-item\"><strong>Ingredients:<\/strong><\/p>\n<ul class=\"cookbook-ingredients-list\">\n<li class=\"cookbook-ingredient\">2 spring onion<\/li>\n<li class=\"cookbook-ingredient\">120g ripe plum tomatoes<\/li>\n<li class=\"cookbook-ingredient\">Handful of fresh coriander<\/li>\n<li class=\"cookbook-ingredient\">Juice of 1 lime<\/li>\n<li class=\"cookbook-ingredient\">Coconut oil<\/li>\n<li class=\"cookbook-ingredient\">240g drained black beans<\/li>\n<li class=\"cookbook-ingredient\">1\/2 tsp smoked paprika<\/li>\n<li class=\"cookbook-ingredient\">1\/4 tsp chilli flakes<\/li>\n<li class=\"cookbook-ingredient\">80g spinach<\/li>\n<li class=\"cookbook-ingredient\">2 eggs<\/li>\n<li class=\"cookbook-ingredient\">1 avocado<\/li>\n<li class=\"cookbook-ingredient\">Sea salt and black pepper<\/li>\n<\/ul>\n<\/div>\n<div class=\"cookbook-container cookbook-container-instructions\">\n<h3 class=\"cookbook-title cookbook-title-instructions\">Instructions<\/h3>\n<p class=\"cookbook-instruction-item\"><strong>Method:<\/strong><\/p>\n<ol class=\"cookbook-instructions-list\">\n<li class=\"cookbook-instruction\">To make the tomato salsa, finely slice the spring onions, dice the tomatoes and roughly chop the coriander, then place in a bowl with half the lime juice.<\/li>\n<li class=\"cookbook-instruction\">Heat 1 teaspoon of oil in a frying pan on a low-medium heat. Add the drained black beans, smoked paprika and chilli flakes, season with sea salt and black pepper and cook for 5 minutes. Add the spinach and cook for a further 2 minutes, until wilted. Stir in the remaining lime juice.<\/li>\n<li class=\"cookbook-instruction\">Meanwhile bring the saucepan of water to a gentle simmer. Create a gentle whirlpool in the pan with a spoon, then carefully break the eggs into the middle,\u00a0one at a time.
