Don\u2019t let their knobbly exterior fool you \u2013 with a gentle sweetness and earthy depth, they shine when roasted until golden and soft, or blended into a silky sauce.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Not to be confused with globe artichokes, Jerusalem artichokes are actually a perennial sunflower native to North America. In fact, it\u2019s commonly believed that the name \u2018Jerusalem\u2019 may have evolved from the Italian word \u2018girasole\u2019 (which means sunflower), rather than a reference to the holy city. Jerusalem artichokes are grown from tubers, rather than seeds (just like potatoes), and are harvested from November to February here in the UK. Lucky us, we can\u2019t get enough of them!<\/span><\/p>\n<h3><b>The good-for-you part<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Not only are Jerusalem artichokes delicious, they\u2019re a source of iron, potassium and vitamin B1. They also contain inulin, a type of prebiotic, soluble fibre that plays a role in feeding beneficial gut bacteria.
