Add a perfectly poached egg and pour over your very own homemade (healthy) hollandaise.&nbsp;<\/p>\n\n\n\n<p>So good, you\u2019ll be queuing up for seconds.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"400\" src=\"https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2021\/11\/Christmas-Leftovers-18.jpg\" alt=\"\" class=\"wp-image-4955\" srcset=\"https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2021\/11\/Christmas-Leftovers-18.jpg 600w, https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2021\/11\/Christmas-Leftovers-18-300x200.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><figcaption>Chef James&#8217; leftovers bubble &amp; squeak<\/figcaption><\/figure><\/div>\n\n\n\n<h2 class=\"has-medium-font-size wp-block-heading\">WHAT YOU NEED&#8230; (for one portion!)<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1\/2 shallot<\/li><li>2 garlic cloves<\/li><li>10g chives<\/li><li>1\/2 stock cube (chicken)<\/li><li>Leftover root veg: Roast potatoes, parsnips and carrots <\/li><li>Leftover sprouts<\/li><li>2 eggs<\/li><li>Sliced turkey<\/li><li>Braised cabbage<\/li><li>1 tbsp maple syrup<\/li><li>1 tbsp Dijon mustard<\/li><li>Cashew cream<\/li><li>20g parmesan cheez (or nutritional yeast)<\/li><li>1 tbsp cranberry sauce<\/li><\/ul>\n\n\n\n<h2 class=\"has-medium-font-size wp-block-heading\">HOW TO MAKE IT&#8230; <\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Boil your kettle. Meanwhile, thinly slice your <strong>shallot, garlic<\/strong> and <strong>chives<\/strong>. Dissolve your <strong>stock cube<\/strong> in 100ml of boiling water.<\/li><li>Make the bubble and squeak &#8211; roughly chop the <strong>potatoes, carrots, parsnips<\/strong> and <strong>sprouts<\/strong>. Place them into a pan with <strong>1 egg<\/strong>, a pinch of salt and pepper then mash. Once heated through, remove from the pan and shape your<strong> bubble &amp; squeak<\/strong> into a ball.<\/li><li>Next heat a frying pan with 1 tsp of oil. Take your <strong>bubble &amp; squeak<\/strong> and pat it down in the pan (keep it an inch or so thick). Cook on both sides for 5 mins, then take out to one side and keep warm. <\/li><li>In the same pan, add the <strong>sliced turkey<\/strong> and <strong>cabbage<\/strong> to warm though for 5 mins.<\/li><li>Make the cheese and chive sauce &#8211; In a medium sized pan with 1 tsp of oil, add the <strong>garlic, shallots<\/strong> and cook for 2 mins. Add the <strong>stock<\/strong> and cook for 1 min, then add the <strong>maple, mustard, cashew cream<\/strong> and <strong>parmesan cheez<\/strong>, cooking for 4 mins on a gentle simmer. Finally add <strong>3\/4 of the chives<\/strong>.<\/li><li>Meanwhile, in a pan of simmering water, crack the <strong>egg<\/strong> to poach for 5 mins. Take out and drain on a cloth to get rid of any excess water. (Need a hand poaching your eggs? Watch out chef&#8217;s tips video <a href=\"https:\/\/www.youtube.com\/watch?v=VDq3bn1lB1c\">here<\/a>) <\/li><li>To plate, add the <strong>bubble &amp; squeak<\/strong> to the centre of the plate, place the <strong>turkey<\/strong> on top, followed by the <strong>red cabbage<\/strong> and <strong>poached egg<\/strong>. Add a spoonful of <strong>cranberry sauce<\/strong> and spoon over the <strong>cheese and chive sauce<\/strong>.
