Here are the quick and easy steps you need to take in order to create this scrumptious dish full of beautiful flavours.&nbsp;<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 220C \/ fan 200C \/ gas mark 7. Boil a kettle. Place the salmon fillets in an ovenproof dish. Bake for 5 mins.<\/li><li>Halve the lemon. Finely chop or crush the garlic. Make the tandoori sauce; remove the creamed coconut from the sachet and dissolve in a bowl with 60ml boiling water. Mix in the garlic, spice, cumin, juice from half the lemon, a pinch of sea salt and 1\/2 tbsp oil.<\/li><li>Remove the salmon from the oven and spoon over half the tandoori sauce, coating well. Bake for another 10 mins, until the salmon is cooked through.<\/li><li>Heat a large frying pan on a medium heat. Add the rice and 2 tbsp water; season with sea salt and black pepper. Cook for 3 mins, stirring occasionally, until the rice is hot. Roughly chop the coriander and stir through the pan while the rice is cooking. Transfer the rice to a bowl; keep warm.<\/li><li>Meanwhile, thinly slice the onion, pepper and courgette (into half-moons). When the rice is done, return the pan to the heat with 1\/2 tbsp oil. Add the onion and cook for 2 mins, then add the pepper and courgette and cook for a further 3 mins. Stir in the remaining tandoori sauce. Add 50ml cold water and cook for a further minute or until the veggies are softening.<\/li><li>Serve the rice and vegetables topped with the salmon. To create a family favourite meal you will need:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 carrot<\/li><li>10 tbsp chickpea flour<\/li><li>1 baby cucumber<\/li><li>1 lemon<\/li><li>1 handful of fresh mint<\/li><li>30g radishes<\/li><li>80g coconut yoghurt<\/li><li>2 bavette steaks<\/li><li>1 tsp pasanda spice<\/li><li>1 handful of fresh coriander<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Cooking Instructions<\/h3>\n\n\n\n<p>In just over five steps you will have made a flavourful Indian recipe with a Mindful Chef twist. To get started, follow these simple instructions:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Roughly chop the herbs. Add half the herbs to a bowl with the chickpea flour; lightly season with sea salt and black pepper. Slowly add 120ml water to the bowl, whisking to avoid lumps. Add a splash more water if necessary (you are looking for a pancake batter consistency).<\/li><li>Make the coconut dip; place the yoghurt in a bowl with the remaining herbs and a pinch of sea salt. Stir.<\/li><li>Rub the steaks with 1\/2 tbsp oil, the spice, sea salt and black pepper. Heat a frying pan with 1 tsp oil on a medium heat. Add the steaks and cook until golden brown (as a guide: 3 mins on each side for medium-rare or 5-6 mins on each side for well-done). When done, remove from the pan and leave to rest on a plate before slicing (keep warm).<\/li><li>Meanwhile, peel the carrot and grate. Peel the cucumber and slice. Slice the radishes. Place all in a bowl and toss together.<\/li><li>When the steaks are done, clean the frying pan and reheat with 1 tsp oil on a medium heat. Add half the chickpea batter, then spread the mix out to form a crepe. Cook for 1 min on each side, then transfer to a plate. Repeat the process with the remaining mix.<\/li><li>Quarter the lemon. Here\u2019s what you need to do to create this healthy lamb dish you\u2019ll want to make again and again.<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Boil a kettle. Rinse the rice, then place in a saucepan with 600ml lightly salted boiling water. Simmer for 25-30 mins, adding the peas for the final minute, then drain. Dissolve the stock cube in a jug with 100ml boiling water.<\/li><li>Heat a medium frying pan with 1 tsp oil on a medium-high heat. Season the lamb steaks with sea salt and place in the pan. Cook for 3 mins on each side, until golden, then transfer to a plate.<\/li><li>Finely chop the onion and garlic. Roughly chop the coriander. Reheat the frying pan with 1 tsp oil on a medium heat. Add the onion, garlic and half the coriander. Cook for 5 mins, then add the spice and cook for 2 mins. Add the stock, yoghurt and almonds to the pan; simmer for 5 mins. Return the lamb (and any juices) to the pan and simmer in the sauce for 5 mins.<\/li><li>Serve the rice and peas with the lamb steaks and pasanda sauce.
