It&#8217;s just good, easy to find ingredients and delicious flavours in our <a href=\"https:\/\/www.mindfulchef.com\/healthy-recipes\" target=\"_blank\" rel=\"noreferrer noopener\" data-type=\"URL\" data-id=\"https:\/\/www.mindfulchef.com\/healthy-recipes\">healthy recipes<\/a>.\u00a0<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 garlic clove<\/li>\r\n<li>4cm fresh ginger<\/li>\r\n<li>2 tbsp honey (use half)<\/li>\r\n<li>80g mangetout<\/li>\r\n<li>100g brown rice noodles<\/li>\r\n<li>1 red pepper<\/li>\r\n<li>300g free-range pork mince<\/li>\r\n<li>2 tbsp rice wine vinegar<\/li>\r\n<li>80g baby sweetcorn<\/li>\r\n<li>2 tbsp tamari<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Cooking Instructions\u00a0<\/strong><\/p>\r\n\r\n\r\n\r\n<ol class=\"wp-block-list\">\r\n<li>Boil a kettle. Place the noodles into a bowl, cover with boiling water, then leave to soak for 7 mins. Drain and rinse well.<\/li>\r\n<li>Thinly slice the pepper. Peel the garlic and ginger, then grate. Cut the mangetout in half. Slice the sweetcorn in half lengthwise. Make the dressing; in a small bowl mix together the tamari, vinegar and honey.<\/li>\r\n<li>Heat a large, non-stick pan with 1\/2 tbsp oil on a medium-high heat. Fry the pork for 5 mins, until golden and cooked through. Transfer into a bowl and set aside.<\/li>\r\n<li>Heat the same pan with 1\/2 tbsp oil on a medium-high heat. Add the pepper, mangetout, sweetcorn, garlic and ginger. Stir-fry for 2-3 mins before adding the pork mince. Cook for a further minute before adding the noodles and dressing to heat through.
