Try our Passion fruit parfait with mango &amp; crunchy granola<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"400\" src=\"https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2021\/02\/Passion-Fruit-Parfait_1.jpg\" alt=\"\" class=\"wp-image-3257\" srcset=\"https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2021\/02\/Passion-Fruit-Parfait_1.jpg 600w, https:\/\/www.mindfulchef.com\/blog\/wp-content\/uploads\/2021\/02\/Passion-Fruit-Parfait_1-300x200.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/figure><\/div>\n\n\n\n<ul class=\"wp-block-list\"><li>2 kiwis<\/li><li>1 mango<\/li><li>2 passionfruit<\/li><li>40g GF oats<\/li><li>10g coconut chips<\/li><li>\u00bd tsp cinnamon<\/li><li>1 tbsp maple syrup<\/li><li>1 tbsp coconut oil<\/li><li>2 tsp sunflower seeds<\/li><li>2 tsp pumpkin seeds<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 200\u00b0C \/ gas mark 6. To make the superseed granola; in a small bowl, mix the oats, ground cinnamon, sunflower seeds, pumpkin seeds, coconut chips, 1 tbsp melted coconut oil and 2 tsp maple syrup with a pinch of sea salt. Stir to mix together well and place in the oven for 15-20 mins or until golden brown.<\/li><li>Meanwhile, peel and dice the kiwis and mango into small \u00bd cm pieces.<\/li><li>Remove the seeds from the passionfruit and place in a separate medium bowl.<\/li><li>To the passionfruit, add the coconut yoghurt, 1 tsp maple syrup and a little cold water (if needed to thin the mix).<\/li><li>To serve, in a glass place a layer of mixed fruit, then top with the passionfruit yoghurt and superseed granola. Repeat these layers to use up all the ingredients.&nbsp;<\/li><\/ol>\n\n\n\n<p><strong>Simple swaps:<\/strong>&nbsp;The sunflower seeds, pumpkin seeds and coconut chips can be replaced with any mixed nuts and seeds in your cupboard. The maple syrup can be replaced with honey or golden syrup. The kiwi, mango and passionfruit can be replaced with alternative fruits like berries, nectarines or even classic banana.
