And, did you know that 80% of our customers chose a vegan meal last year?<\/p>\n\n\n\n<p>In light of this, we thought we\u2019d share three hacks for a plant-based Pancake Day, no butter or eggs necessary!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">1. Power to buckwheat flour<\/h2>\n\n\n\n<p>Not only is buckwheat flour <a href=\"https:\/\/www.mindfulchef.com\/gluten-free-recipe-boxes\">gluten-free<\/a>, it also makes a great base for egg-less pancakes. This week we serve up <strong>buckwheat pancakes with harissa-spiced jackfruit<\/strong>, but they\u2019re equally delicious with sweet toppings too \u2013 you decide. Give chickpea flour a go<\/h2>\n\n\n\n<p>We love chickpeas so much, we\u2019ve used them twice in this week\u2019s Tamarind chickpea curry &amp; chickpea pancakes. Once you try them you\u2019ll be hooked and won\u2019t be able to eat curry without \u2018em. To make them egg-free, take 1 tbsp chia seeds and place in a small bowl with 3 tbsp water.
